Samuel N. Cheuvront, MS, RD is currently a doctoral candidate at Florida State University where he is completing his dissertation entitled, "Thermo-regulation in Female Marathon Runners". Mr. Cheuvront earned both his B.S. and M.S. degrees in Food and Nutrition from Indiana University of Pennsylvania. He was honored on October 8, 1999 during IUP Homecoming by representing the College of Health and Human Services and receiving a 1999 Alumni Ambassador Award from the IUP Alumni Association.

Sylvia Escott-Stump, MA, RD, LDN is currently the Dietetic Program Director at East Carolina University in Greenville, North Carolina. A 1974 graduate of IUP, Mrs. Escott-Stump received her B.S. degree in education with an emphasis in food and nutrition. In 1980 she received her M.A. degree in adult-community education from IUP. Her past professional roles included serving as director of dietetics for Allegheny United Hospitals - Forbes Nursing Center in Pittsburgh; providing dietetic services to various health care providers including Shadyside Hospital, Wexford House Nursing Center, Family Health Council of Western Pennsylvania, and Indiana Hospital. She owned a consulting business called Nutritional Balance in Pittsburgh providing nutritional programs and services to private practice physicians, businesses and educational institutions. Mrs. Escott-Stump has a notable history of service in both voluntary and elected capacities with the American Dietetic Association, its practice groups, and affiliate and district organizations. She is the author and co-author of widely recognized texts that have enhanced the knowledge and attitudes of countless student. These texts, Krause's Food, Nutrition and Diet Therapy and Nutrition & Diagnosis-Related Care, are among the most widely used texts for nutrition education in the United States. Mrs. Escott-Stump's contributions to the profession have been recognized through numerous awards including:
  • 1998 IUP Distinguished Alumna for outstanding professional accomplishments in dietetics and health care and a successful woman entrepreneur
  • 1998 Outstanding Dietitian for Pennsylvania
  • 1997 American Dietetic Association Medallion Award
  • 1996 team finalist for the Forbes Health System's President's Quality Award
  • Recipient of the 1992-95 Family Practice Residency Distinguished Service Award
Brian Tobin, PhD is currently an Associate Professor of Nutrition and Biochemistry and an Adjunct Associate Professor of Pediatrics at the Mercer University School of Medicine. Dr. Tobin began his research studies in diabetes as a Master's degree student at IUP (May 1985 graduate) and continued to pursue a doctoral degree at Penn State University. Dr. Tobin's primary research interests are (1) metabolic and nutrition consequences of novel insulin therapies in diabetes mellitus and (2) iron deficiency. Dr. Tobin's impressive research program in the area of insulin-dependent diabetes mellitus have been recognized with numerous awards including:
  • 1998 National Aeronautics and Space Administration - Johnson Space Center / American Society for Engineering Education (NASA/ASEE) Summer Faculty Fellowship Award;
  • 1998 Bio-Serv Award from the American Society for Nutritional Sciences;
  • 1995 Penn State University College of Health and Human Development Emerging Professional Award;
  • Canadian Diabetes Postdoctoral Fellowship (1989-1992);
  • 1987 Student Research Award from the American College of Sports Medicine;
  • 1985 Outstanding Paper Award from the International Microwave Power Institute; and the
  • 1984 Berthy Memorial Scholarship from the Department of Food and Nutrition at IUP.
Karen A. Virostek, MS, RD 1998 Pennsylvania and Area VI Outstanding Dietetic Educator*, Dietetic Internship. Karen recevied her BS in Dietetics, 1980 and MS in Food and Nutrition, 1986 from IUP. She is currently the Dietetic Internship Program Director for the Family Health Council, Inc., Pittsburgh.

*Outstanding Dietetic Educators: Each year the American Dietetic Association in association with the area and state affiliates recognizes outstanding dietetic educators.
